Pinterest to Reality : Blueberry Cupcakes

Recently I stumbled upon a picture of these blueberry cupcakes on Pinterest.  They looked so yummy, I had to try them out for myself.  I’ve never made lemon curd before (or blueberry cupcakes) so I thought this would be a great recipe to try.  The cupcakes are sooooo yummy and the lemon curd filling really tops them off!!  The only thing I would change is the frosting. I like the frosting but it isn’t something I am too fond of (plus it is rather expensive to make, mascarpone isn’t cheap!).  I love a traditional butter-cream frosting and this is so far from that so I was a little disappointed.  The frosting is still good, but if you are looking for something a little sweeter try a different frosting recipe (like this one).
